Peanut Butter Oatmeal Cookies

Looking for a simple Stay Home and Bake recipe? These delicious peanut butter oatmeal cookies are SUPER easy to make. Soft and chewy with brown sugar and maple flavor, these are sure to liven up a weekend at home.

Peanut Butter Oatmeal Cookies

Servings: 12

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup brown sugar 

  • 1/4 cup carob chips or chocolate chips (I use Chatfield’s Carob Chips)

  • 1 egg, beaten

  • 2 tbsp maple syrup 

  • 1 tsp vanilla extract 

  • 1/2 cup natural peanut butter (I use Maranatha Peanut Butter)

  1. Preheat oven to 350. Line a baking sheet with parchment paper (Pre-cut sheets are super convenient.)

  2. In a large bowl, add the rolled oats, baking power, salt, brown sugar, and carob chip. Mix.

  3. In a separate bowl, beat the egg. Add in the vanilla and maple syrup. Whisk.

  4. Pour the liquid mixture into the oat mixture. Add in the peanut butter. Mix.

  5. Divided the dough into 12 rounded balls. Place on baking sheet and press down gently. Bake for 16 minutes. Let them cool for 10 minutes before digging in.
